Ingredients

  • 8 slices cinnamon-swirl raisin bread, halved on the diagonal
  • 6 large eggs
  • 1 cup fat-free half-and-half
  • 3 Tbsp turbinado sugar
  • 1 tsp vanilla extract
  • ¾ tsp ground cinnamon
  • Ground nutmeg, salt, to taste
How to Make It
  1. Spray an 8" x 11" baking pan with nonstick spray. Layer bread in the pan, overlapping slices to fit.
  2. Whisk together eggs, half-and-half, 2 Tbsp of sugar, the vanilla, cinnamon, nutmeg, and salt in a medium bowl. Pour egg mixture over bread to cover, pushing slices down into the egg mixture. Cover and refrigerate at least 1 hour or up to 1 day.
  3. Preheat the oven to 350°F. Uncover French toast and sprinkle with remaining 1 Tbsp sugar. Bake until French toast is puffed and browned, about 35 minutes. Let cool about 10 minutes before serving.
