Berry-Berry Orange Iced Bars Recipe

Ingredients

For Bars
  • 1½ cups (355 ml) orange juice (or 1 cup [235 ml] water and ½ cup [120 ml] orange juice concentrate)
  • 1 cup (200 g) sugar
  • ¼ cup (60 ml) vegetable oil
  • 1 teaspoon (5 ml) vanilla
  • 3 cups (375 g) Bob’s Red Mill white rice flour
  • 1 tablespoon (13.8 g) baking powder
  • ½ 2 teaspoon (3 g) salt
  • 1½ cups (218 g) fresh or frozen blueberries
For Icing (optional)
  • 1 cup (120 g) powdered sugar
  • 2 teaspoons (10 ml) orange juice
How to Make It
  1. Preheat oven to 350°F (180°C, or gas mark 4).
  2. To make the bars
  3. In a large bowl, combine orange juice and next 6 ingredients (through salt) and mix until smooth. Stir in blueberries.
  4. Pour batter into a greased 9 x 13-inch (23 x 33-cm) baking pan.
  5. Bake for about 40 minutes, or until the center cracks. Let cool.
  6. To make the icing
  7. Stir together the powdered sugar and orange juice. Pour icing over cooled cake. Cut into bars. Sprinkle with lemon zest if desired.
