Cilantro lime rice recipe

Add a delicious flair to your rice by mixing in fresh lime and cilantro. This rice is one of our favorites to make with Chicken Burrito Bowls and is the perfect side for any Mexican dish.

Ingredients

  • 2 tablespoons salted butter
  • 1 garlic clove, minced (½ teaspoon)
  • 1 cup uncooked jasmine rice
  • 1 (15-ounce) can chicken or vegetable broth (about 2 cups)
  • 1 lime juice and zest
  • 3 to 4 tablespoons finely chopped fresh cilantro
  • Salt and black pepper
How to Make It
  1. In a large saucepan, melt the butter over medium heat. Stir in the garlic and cook for 1 minute. Stir in the rice, broth, and lime zest. Bring to a boil, then reduce the heat to low. Stir the rice, cover the pan, and cook for 20 minutes, or until the liquid has been absorbed and the rice is tender.
  2. Stir in the lime juice and cilantro, and season with salt and pepper to taste.
