Coconut & spirulina balls recipe

Ingredients

  • ½ cup (90 g) dates, pitted
  • ½ cup (65 g) cashews
  • 1 large teaspoon coconut oil
  • 1½–2 teaspoons spirulina powder
  • 1 large teaspoon matcha powder (green tea powder)
  • about ¼ cup (20 g) unsweetened desiccated coconut
How to Make It
  1. Soak the dates in a bowl of water for 30 minutes, but no longer than that.
  2. Put the cashews in a food processor and pulse for about 30–45 seconds until a thick meal has formed.
  3. Rinse the dates, wipe off any extra moisture and add them to the food processor along with the coconut oil, spirulina and matcha powder. Process until a large ball starts to form. Remove the blade and take the processor bowl off the stand.
  4. Using damp hands to prevent the mixture from sticking too much, pinch off pieces of the mixture about the size of whole walnuts. Roll them into balls between the palms of your hands.
  5. Roll each ball in the desiccated coconut to coat it evenly, then place on a plate or board. Repeat with the rest of the mixture.
  6. Refrigerate the energy bites for at least 20 minutes. Store in the fridge in an airtight container for up to 3 weeks.
