Energy bites with oats and dried cherries recipe

Ingredients

  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 1 cup quick-cooking oats
  • ½ cup unsweetened coconut flakes
  • ¾ cup coarsely chopped dried cherries, whole raisins, or mini chocolate chips
  • ½ cup creamy almond, peanut, or sunflower butter
How to Make It
  1. In a medium bowl, stir together the honey, vanilla, cinnamon, salt, and 3 tablespoons hot water. Stir in the oats and coconut and let the mixture sit for 10 minutes. Fold in the cherries and almond butter and stir thoroughly to combine.
  2. Scoop out the mixture in leveled tablespoons and roll into balls between your palms. Transfer the balls to a plate or rimmed baking sheet and chill for at least 30 minutes before serving. Keep these in an airtight container in the refrigerator for a week or in the freezer for up to 3 months.
