Ingredients

  • 3 pounds red potatoes, washed and quartered
  • 2 tablespoons salted butter
  • 2 tablespoons olive oil
  • 1 (1-ounce) packet ranch seasoning
  • 1 tablespoon chopped chives
  • 1 tablespoon minced garlic
  • Kosher salt and freshly ground pepper, to taste
How to Make It
  1. Blanch the potatoes according to the directions. Combine all ingredients in a large bowl. Label a 1-gallon freezer bag, place it in another large bowl, and pour in the mixture. Squeeze the remaining air out of the bag and seal it. Lay the bag flat to freeze.
  2. Serving Day
  3. Allow the potatoes to thaw overnight in the refrigerator. On serving day, pour the mixture into the slow cooker, cover it, and cook on high for 3–4 hours. Stir the potatoes after 1 hour and start checking for doneness after 2 hours. They should be fork tender before serving.
