Japanese rice salad recipe

Ingredients

  • 4 cups white basmati rice (cooked)
  • 2 cups cooked garbanzo beans
  • ¼ cup sliced scallions
  • ½ cup chopped green bell pepper
  • 1 cup chopped tomatoes
  • 2 tablespoons chopped cilantro
  • ½ teaspoon minced fresh ginger root
  • 1 clove garlic, minced
  • ¼ teaspoon minced red hot chili
How to Make It
  1. Combine the above ingredients in a large bowl and mix well.
  2. Serve between grilled tofu slices on a bed of salad greens.
