Rice cakes with semi-dried tomato & ricotta recipe

Ingredients

  • 50 g low-fat ricotta cheese
  • 3 semi-dried tomatoes, thinly sliced
  • Fresh basil leaves, torn, to taste (optional)
  • 3 rice cakes
  • Sea salt and ground black pepper, to taste
How to Make It
  1. Place the ricotta, semi-dried tomato and basil (if using) in a small bowl and mix until well combined.
  2. To serve, spread the ricotta and semi-dried tomato mixture over the rice cakes. Season with salt and pepper, if desired.
