I say the word ‘salsa’ and I think fresh and cheeky. Like a dance of sorts: the flavours are for light fun and a good time and a pale lager!

  • Yield: 4 Servings

Ingredients

  • 6 large ripe tomatoes
  • 1 small white onion
  • 4 garlic cloves
  • 1 jalapeño chilli
  • 1½ oz/1 cup (40 g) roughly chopped coriander
  • ½ teaspoon sea salt
  • 1 tablespoon lime juice
  • corn chips or tortilla chips
How to Make It
  1. Use a small sharp knife to cut out the core of each tomato. Make a small cross-shaped incision in the opposite end, to make the tomatoes easier to peel.
  2. Put the tomatoes in a bowl and cover with boiling water. Leave for a few seconds, or until the skin starts to peel back from the flesh. Drain well. Peel the tomatoes and discard the skin.
  3. Cut the tomatoes in half and scoop out the seeds. Finely chop the tomatoes and toss together with the onion, garlic, chilli, coriander, salt and lime juice. Serve with corn chips or tortilla chips.
