Simple garden salad recipe

Here’s an uncomplicated garden salad for any occasion, even a blind date. Just make sure your friend is willing to share meals if you want a call back.

Ingredients

For the Vinaigrette
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black
  • pepper pinch of sugar
  • ¼ cup extra virgin olive oil
For the Salad
  • 3–4 cups chopped romaine, rinsed and dried
  • ½ cup grape tomatoes
  • ½ cucumber, thinly sliced into half-moons
  • 4 scallions, finely chopped
  • 2 radishes, thinly sliced
  • 1 carrot, peeled and thinly sliced
  • salt and pepper, to taste
How to Make It
  1. Make the vinaigrette: In a small mixing bowl, whisk the vinegar, mustard, kosher salt, black pepper, and sugar. Slowly drizzle in the olive oil until dressing has emulsified, or come together.
  2. In a large mixing bowl, place the romaine, tomatoes, cucumber, scallions, radishes, and carrots then drizzle in the prepared dressing.
  3. Season with salt and pepper, toss the salad, and serve immediately.
