Strawberry and banana crepes recipe

These crepes not only look good, but they taste pretty amazing as well. One bite of these crepes and I guarantee you will become hooked.

Ingredients

For the Crepes
  • 1½ cups of whole milk
  • 3 eggs
  • 2 Tablespoons of butter, melted
  • ½ teaspoons of pure vanilla
  • 1¼ cups of all-purpose flour
  • 2 Tablespoons of white sugar
  • Dash of salt
For the Filling
  • 1 cup of heavy whipping cream, whipped
  • 3 ounces of cream cheese, soft
  • 1½ cups of whole milk
  • 1, 3 ounce box of vanilla pudding
  • 1 teaspoon of pure vanilla
For Topping
  • 2 pints of strawberries, thinly sliced
  • 2 to 3 bananas, thinly sliced
How to Make It
  1. Prepare the crepes. In a bowl, add in the whole milk, eggs, melted butter and pure vanilla. Whisk until lightly beaten. Add in the all-purpose flour and dash of salt. Stir well until evenly blended.
  2. In a skillet, grease with 2 to 3 tablespoons of butter. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat.
  3. Prepare the filling. In a bowl, add in the cream cheese. Beat with an electric mixer until smooth in consistency. Add in the whole milk, pudding and pure vanilla. Continue to beat until mixed. Add in the whipped heavy whipping cream. Fold gently to incorporate.
  4. Spoon 1/3 of the filling in the center of each crepe. Roll tightly and place onto a serving plate. Repeat.
  5. Serve with a topping of sliced strawberries and sliced bananas.
