Vegetable stew recipe

You don’t have to be vegetarian to enjoy a bowl of vegetable stew delicately flavored with saffron.

Ingredients

  • 2 tablespoons olive oil
  • 1 diced large onion
  • 3 garlic cloves
  • Salt and pepper to taste
  • ¼ teaspoons cumin
  • Pinch saffron threads
  • 1 lb cubed sweet potatoes
  • 6 peeled and sliced carrots
  • 1 peeled and diced parsnip
  • 1 peeled and cubed celeriac
  • 1 cup cauliflower florets
  • 2 cup canned tomatoes with juices
  • 2 cup chicken broth
  • 1 cinnamon stick
How to Make It
  1. Heat the olive oil in a skillet and sauté the onions and garlic for 5 minutes.
  2. Stir in the cumin and saffron and keep stirring for 1 minute
  3. Place the onions and garlic in a slow cooker and add the vegetables, tomatoes, broth and cinnamon stick.
  4. Season with salt and pepper. Cook on high for 4 hours. Discard the cinnamon stick.
