Almond butter toast with fresh peaches and honey recipe

In the summertime, when we’ve got more tomatoes, peaches, zucchini, and cherries than we know what do with, my meal prep time is quite minimal. The work has nearly all been done for me. A hearty nut butter toast is often what I reach for when hunger strikes. Topped with a good bit of thinly sliced peaches and drizzled with honey, this toast takes on a whole new identity. If peaches aren’t on hand, nectarines, plums, strawberries, or cherries make a nice substitute. Any nut or seed butter will do.

  • Yield: 4 Servings

Ingredients

  • 3 tablespoons unsalted butter
  • 4 pieces thick-cut bread (1 to 1½ inches / 2.5 to 4 cm)
  • ½ cup / 50 g Deeply Toasted Almond Butter
  • 4 ripe peaches, pitted and thinly sliced
  • 1 tablespoon honey
  • Vanilla Salt or flake salt
How to Make It
  1. In a large skillet over medium-high heat, melt half of the butter. Once the butter starts to sputter, add the bread and cook until deeply golden, 3 to 4 minutes. Add the remaining butter, then toast on the other side.
  2. Slather a couple of tablespoons of almond butter on each piece of toast, then top with peach slices and a drizzle of honey. Finish with a few flakes of salt.
