Banana lemon cake recipe

Banana lemon cake is very light and a tasty dessert.

Ingredients

For the Dough
  • 4 eggs
  • 1 medium banana
  • 4 oz (½ cup) Whole grain flour 
  • 2 tbsp Brown sugar
  • 2 tbsp Liquid honey
  • 2 tbsp Olive/coconut oil
  • 1 tsp Baking powder
For the Topping
  • 1 lemon
  • 1 medium banana
How to Make It
  1. Grate the lemon peel and take 3–4 tsp. of peel for the dough. Squeeze juice from the lemon (you will need 2 tbsp. of the juice).
  2. Preheat the oven to 380°F.
  3. Prepare the dough. You can make it two ways: using a blender or manually.
  4. Way 1: Peel the banana, and place it in a blender cup. Add 2 tsp. of lemon peel and lemon juice. Add the rest of ingredients for the dough in a blender and mix.
  5. Way 2: Whisk eggs and honey; then add mashed banana and the rest of ingredients including lemon juice and peel. Mix well using a tablespoon.
  6. Prepare the tray apply oil on the surface or place a layer of wax paper at the bottom.
  7. Pour out the dough.
  8. Place the tray in the oven for 40 minutes.
  9. To check if the dough is ready, just poke it with a fork the pieces of the dough should not stick to the fork when you remove it. Extend the time by 5–10 minutes, if necessary.
  10. Remove the cake and cool it down before serving. Add sliced banana and the rest of lemon peel on the top to decorate your cake. enjoy!
