Barbacoa beef recipe

If you enjoy spicy foods, you’ll truly love this Barbacoa beef. You’ll enjoy the shredded, spicy beef that is pressure pot braised in the flavors of oregano, garlic, cumin and chipotle adobo.

Ingredients

  • 5 garlic cloves
  • ½ onion, medium
  • 1 juiced lime, fresh
  • 2 to 4 tbsp of adobe-sauced chipotles, as desired
  • 1 tbsp of cumin, ground
  • 1 tbsp of oregano, ground
  • ½ tsp. of cloves, ground
  • 1 cup of water, filtered
  • 3 pounds of fat-trimmed beef roast
  • 2½ tsp of salt, kosher
  • ground black pepper
  • 1 tsp of olive oil,
  • 3 bay leaves, dry
How to Make It
  1. Place the water, cloves, chipotles, oregano, cumin, lime juice, onion and garlic. Puree till consistency is smooth.
  2. Trim fat from meat and cut it into 3” pieces. Season using 2 tsp of kosher salt and ground pepper.
  3. Heat pressure pot on High setting. Add oil when hot. Brown meat on each side. Add bay leaves and sauce. Cover. Cook on high pressure till meat becomes tender and you can easily shred it.
  4. Once meat has cooked and is tender, remove it. Place in dish. Shred and discard bay leaf. Set liquid aside.
  5. Return shreds of meat to pressure pot. Add salt as desired. Add 1½ cups of beef liquid and ½ tsp of cumin. Combine. Serve.
