This region of Spain is very famous for its blue cheese. Get the Spanish kind if you can find it; otherwise, any good blue cheese will do for this delicious steak sauce.

Ingredients

  • 3 tbsp olive oil
  • 4 beef tenderloin steaks
  • Salt and pepper to taste
  • 1 diced onion
  • 1 tbsp paprika
  • 3 tbsp brandy
  • 2/3 cup beef broth
  • 5 oz blue cheese
How to Make It
  1. Heat the olive oil in a big skillet.
  2. Season the steaks with salt and pepper.
  3. Brown the steaks on both sides for 5 minutes each side (rare) or for desired doneness.
  4. Move the steaks to a platter and keep them warm.
  5. Sauté the onion in the same skillet for 5 minutes.
  6. Stir in the paprika and coat while stirring for 1 minute
  7. Pour in the brandy and broth and cook on high for 5 minutes, until the sauce is reduced by half.
  8. Stir the cheese into the sauce and let simmer for 2 minutes. Pour the sauce over the steaks.
