Cacao reishi cookie bites recipe

Ingredients

  • 1½ cups coconut flakes, macaroon-cut or fine-cut
  • 1½ cup walnuts
  • 3 tablespoons coconut butter (optional, for more smoothness)
  • ⅓ cup dates, pitted
  • 4–5 tablespoons raw honey (liquid or crystallized) or coconut nectar
  • 2 tablespoons lucuma powder
  • 2 tablespoons maca powder
  • ½ teaspoon reishi extract powder
  • ½ teaspoon ashwagandha extract powder
  • ⅓ cup cacao powder
  • ⅛ teaspoon Himalayan salt
  • Pinch of cinnamon
  • Pinch of nutmeg
  • Schisandra berry extract powder (optional)
How to Make It
  1. Place the coconut flakes and the walnuts in a food processor, and mix until a fine texture forms.
  2. Add remaining ingredients to the food processor, and mix until combined and sticky.
  3. Roll into 1-inch balls, add a dusting of schisandra berry extract powder if desired, and chill before serving for best results. Store chilled.
