Ingredients

  • 1 mango, chopped
  • 2 scallions, chopped
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon crushed red pepper
  • 1 tablespoon plus 1 teaspoon olive oil
  • Kosher salt
  • 1¼ pounds pork tenderloin
  • 1 teaspoon ground coriander
  • Lime wedges, for serving
How to Make It
  1. Combine the mango, scallions, lime juice, red pepper, 1 tablespoon of the oil, and ¼ teaspoon salt.
  2. Rub the pork with the remaining 1 teaspoon of oil; season with the coriander and ½ teaspoon salt.
