Chickpea tomato stew recipe

Tomato stew is the most common go-to stew across Africa. It is a simple tomato stew commonly served with cooked rice, and usually filled with a variation of meats but this recipe replaces that with chickpea.

Ingredients

  • 1 cup canned/tinned chickpea
  • 1 tablespoon tomato paste
  • 1 cu p tinned plum tomatoes
  • 1 teaspoon dried mixed herbs
  • 1 teaspoon curry powder
  • ¼ cup vegetable oil
  • 2 teaspoons seasoning powder of choice or equivalent
  • 1 medium onion (chopped)
  • 1 small scotch bonnet pepper
How to Make It
  1. Add tomatoes and pepper to a blender and blend together.
  2. Place a pot on medium heat and add vegetable oil.
  3. Add chopped onions, curry and dried mixed herbs and fry for 2 minutes.
  4. Add chickpeas and fry for 2 more minutes.
  5. Add tomato paste and seasoning powder and fry for 3 minutes.
  6. Add blended plum tomatoes and mix together with a wooden spoon.
  7. Place lid on top of the pot and leave to cook for approx. 10 -15 minutes.
  8. Serve with cooked white rice.
