Curried roast cauliflower recipe

A whole head of cauliflower with a baked-on curry paste makes this recipe into a showstopper! Serve with the Tofu Masala shown or the dal shown and steamed rice for an impressive dinner.

Ingredients

Curried Paste Ingredients
  • ¼ cup (60 ml) mild oil or aquafaba
  • 2 teaspoons (6 g) grated ginger
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ½ teaspoon ground turmeric
  • ¼ teaspoon ground chili such as cayenne (to taste)
  • ¼ teaspoon dry mustard powder
How to Make It
  1. Oil your crock or line with parchment paper. Place in the prepared cauliflower. Note: if your cauliflower doesn’t fit in your slow cooker, you can break it into large pieces.
  2. Mix together all the curry paste ingredients and pour over the cauliflower. Cook on low 7 to 9 hours or on high for 4 hours.
