  • Yield: 15

Ingredients

  • 2 oranges
  • 100 g granulated sugar
  • 50 ml water
  • 100 g good-quality dark chocolate
How to Make It
  1. Preheat the oven to 80 °C. Line two baking trays with baking paper.
  2. To make the Orange Peel
  3. Using a potato peeler, peel thick strips of orange peel. Heat enough water in a saucepan to cover the orange peels and boil the peels for 5 minutes. When done, strain the peels and pat dry with paper towel.
  4. To make the Sugar Syrup
  5. Heat the sugar and water in a small saucepan over a medium heat. Stir continuously until all the sugar has dissolved and then bring to the boil. Add the peels and simmer for 10 minutes. Using a slotted spoon, remove the peels from the syrup and arrange them on one of the prepared baking trays. Place in the oven for 1 hour to dry out.
  6. Dipping the Peel
  7. Melt the chocolate in a glass bowl over a saucepan of simmering water; dip the candied peels into the melted chocolate and arrange on the other baking tray to set.
