Dessert pizza recipe

This recipe is sure to be a crowd favourite! If you use frozen berries rather than fresh ones, make sure that you let them thaw completely before topping your pizza.

Ingredients

Brownie Base
  • 50 g ground almonds
  • 45 g plain flour
  • 2½ tablespoons cornflour
  • 1 egg
  • 2½ tablespoons raw cacao powder
  • 2½ tablespoons coconut sugar
  • ½ teaspoon baking powder
  • ½ cup (125 ml) milk of choice
  • 1 teaspoon coconut oil, melted
Topping
  • 120 g low-fat cream cheese
  • 125 g low-fat plain Greek-style yoghurt
  • ½ teaspoon pure vanilla extract
  • Strawberries, hulled and sliced, to serve
  • Raspberries, to serve
  • Coconut flakes, to serve
  • Mint leaves, to serve
How to Make It
  1. Preheat the oven to 180°C (160°C fan/gas 4) and line a pizza tray with baking paper.
  2. To make the brownie base, place the ground almonds, flour and cornflour in a mixing bowl and stir until well combined. Add the egg, cacao powder, coconut sugar, baking powder and milk and stir until well combined.
  3. Pour the mixture into the centre of the lined tray and bake in the oven for 10 minutes. Brush with the coconut oil and bake for a further 5 minutes. Set aside to cool slightly.
  4. Meanwhile, to make the topping, place the cream cheese, yoghurt and vanilla in a bowl and stir until well combined. Spread onto the brownie base using a spatula.
  5. To serve, top with the strawberries, raspberries, coconut flakes and mint. Cut the pizza into smaller pieces using a sharp knife.
