Freekeh with chickpeas recipe

A staple in North African cuisines, freekeh is a smoky and earthy grain that is nutritious and delicious. This recipe will make it a staple in your house too!

Ingredients

  • 2 cups freekeh
  • 1 tsp salt
  • ¾ cup fresh parsley, chopped
  • 1/3 cup fresh mint, chopped
  • 1 bunch scallions, chopped
  • 2 cans chickpeas, rinsed and drained
  • 1 tsp toasted cumin seeds, ground
  • 1 tsp red pepper flakes
  • ½ cup freshly-squeezed lemon juice
  • 2 garlic cloves, minced
  • ¾ cup olive oil
How to Make It
  1. In a medium-sized saucepan over medium-high heat, toast freekeh for 3-5 minutes until fragrant. Add in 4 cups of water and salt and bring to a boil. Lower the heat, cover and simmer for 25-30 minutes or until all the liquid has disappeared. Remove from heat and let it sit for 15 minutes. Take off lid and let it cool for 10 minutes more.
  2. In a large bowl, combine cumin seed, red pepper flakes, lemon juice garlic and olive oil. Add in the freekeh, herbs, chickpeas and scallions and toss to combine. Enjoy
