Gluten free and low carb crepes recipe

This is the perfect crepe recipe to prepare for those who need to avoid certain foods due to food sensitivities.

Ingredients

  • 2 Tablespoons of coconut flour
  • 1 tablespoon of tapioca starch
  • ¼ teaspoons of salt
  • 4 eggs
  • ½ cup of water
  • 1 tablespoon of coconut oil, melted
  • ½ teaspoons of pure vanilla
How to Make It
  1. In a bowl, add in the coconut flour, tapioca starch and dash of salt. Stir well to mix.
  2. In a separate bowl, add in the eggs, water, melted coconut oil and pure vanilla. Whisk until mixed. Add in the flour mix and stir well until smooth in consistency.
  3. Set the batter aside to rest for 10 minutes.
  4. In a skillet set over medium to high heat, grease with cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat. Serve immediately.
