Greek pasta toss recipe

If your religious beliefs prevent you from eating pork, but you like pasta with sausage, this recipe is the one for you. It calls for turkey sausage instead of pork.  After cooking the spiral pasta, all ingredients are cooked and combined. That’s it; your pasta is ready for dinner.

  • Yield: 4 Servings

Ingredients

  • ¾ pound Italian turkey sausage links
  • 3 cups uncooked whole wheat spiral pasta
  • 2 minced garlic cloves
  • 4 ounces fresh baby spinach
  • ½ cup pitted Greek olives, cut into half
  • ¼ cup crumbled feta cheese
  • 1/3 cup julienned oil-packed sun-dried tomatoes
  • Lemon wedges (optional)
How to Make It
  1. Remove casings of sausage, set aside. Drain and chop tomatoes and set aside.
  2. Cook pasta in a six-quart stockpot and cook according to what is directed in the package.
  3. Drain the pasta and return to the stockpot.
  4. Cook sausage in a large skillet and crumble on moderate-high heat until it is no longer pink for four to six minutes.
  5. Sauté the garlic for one minute and add to the cooked pasta. Stir in the spinach, tomatoes and olive until the leaves of spinach are wilted. Add the cheese and serve pasta with lemon wedges. Enjoy!
