Groundnut pasta recipe

This pasta recipe is a modernisation of the traditional groundnut soup. This rich groundnut pasta is prepared by cooking pasta in groundnut sauce made up of blended groundnut, tomato paste and coconut milk.

Ingredients

  • 4 cups past a of choice
  • 1 cup ground nut / roasted peanuts
  • 1 small onion (chopped)
  • 1 small chilli pepper (chopped)
  • ¼ cup tomato paste
  • 4 teaspoons seasoning powder
  • ½ cup coconut milk
  • ¼ cup vegetable oil
How to Make It
  1. Add groundnut and ¾ cup of water to a food processor and blend until it forms a thick paste, then put aside.
  2. Add pasta into a pot with hot water and place on medium heat.
  3. After boiling, strain hot water from pasta and rinse with cold water.
  4. Place a separate pot on medium heat and add vegetable oil.
  5. Add onions and chopped chilli into oil and allow to fry for 2 minutes.
  6. Add groundnut paste and seasoning powder and fry for 3 minutes.
  7. Add tomato paste and mix in with groundnut, then continue to fry. Add mixed vegetables.
  8. Add coconut milk and ¼ cup of water and mix all together.
  9. Add the pre-boiled pasta.
  10. Mix all together and leave to cook on low heat for 7 - 10 minutes.
  11. Turn off the hob and serve (may garnish with vegan cheese).
