Ingredients

  • 14 oz (400 g) can French green lentils, drained and rinsed
  • 14 oz (400 g) can artichoke hearts, drained and sliced
  • 4 or 5 red peppers, roasted and sliced
  • 2 fresh thyme sprigs, leaves only
  • handful of fresh flat-leaf parsley, finely chopped
  • 4 scallions, finely chopped
  • 3 tbsp walnut oil
  • 1 tbsp apple cider vinegar
  • salt and freshly ground black pepper
  • 5 prosciutto slices, chopped handful of arugula
How to Make It
  1. Put the lentils, artichoke hearts, red peppers, herbs, and scallions in a large bowl. Drizzle with the oil and vinegar, season with salt and pepper to taste, and toss gently to mix.
  2. Add the prosciutto and arugula to the salad, and toss gently. Divide between 4 plates, and serve.
