Mexican-style meatballs and mini sausages recipe

Ingredients

  • 1 egg
  • ¼ cup fine dry bread crumbs
  • ¼ cup finely chopped onion
  • 3 cloves garlic, minced
  • 12 ounce lean ground beef
  • 4 ounce uncooked chorizo sausage (remove casing, if present)
  • 1 (16-ounce) jar salsa
  • 1 (12-ounce) jar chili sauce
  • 1 (16-ounce) jar chili sauce
  • 1 (16-ounce) package small cooked smoked sausage links
  • 2 tbsp snipped fresh cilantro (optional)
How to Make It
  1. Preheat oven to 350 degree F. In a medium bowl, beat egg with a fork; stir in bread crumbs, onion, and garlic. Add ground beef and chorizo sausage; mix well. Shape into about thirty-eight 1-inch meatballs.
  2. Place meatballs in a 15x10x1-inch baking pan. Bake about 18 minutes or until meatballs are cooked through. Drain off fat. pat dry with paper towels.
  3. In a 3½ or 4 quart slow cooker, stir together salsa and chili sauce. Stir in baked meatballs and smoked sausage links. Cook on low-heat setting for 3 to 4 hours or on high-heat setting for 1½ to 2 hours. If desired, sprinkle with cilantro before serving. Serve with decorative wooden picks.
