Open sandwich with salmon recipe

Ingredients

  • 1 slice wholemeal bread
  • 1 small handful baby spinach leaves
  • ½ medium cucumber, sliced
  • ½ small red onion, thinly sliced
  • 3 cherry tomatoes, halved
  • 35 g tinned salmon, drained
  • 25 g soft goat’s cheese
  • Ground black pepper, to taste
How to Make It
  1. Toast the bread to your liking.
  2. To serve, place the bread on a serving plate and top with the spinach, cucumber, onion, tomato, salmon and goat’s cheese. Season with pepper, if desired.
