Puff puff recipe

“Puff puff” is a soft fried pastry ball, a classic snack in many countries in Africa including Nigeria, Cameroon, and Ghana. Though the name may differ from country to country e.g. Ghanaians call it “Bofrot”.

Ingredients

  • 1 cu p plain flour
  • 1 teaspoon dry active yeast
  • ⅓ cup sugar
  • ½ cup warm water
  • 1 teaspoon vegan dairy free butter
  • Vegetable oil for frying
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
How to Make It
  1. In a bowl, mix together the flour, baking powder, nutmeg and cinnamon.
  2. In another bowl, add yeast and sugar to warm water and mix together until sugar and yeast are fully dissolved.
  3. Add wet mixture to the bowl of dry ingredients and whisk together to make a thick batter.
  4. Cover the batter and leave in dark place (e.g. oven) for 20 minutes.
  5. After 20 minutes, add oil to deep frying pan approx. 2 inches deep and place on medium heat.
  6. When the oil is hot, scoop some batter into hot oil using either ice cream scoop or clean hands, repeat this several times.
  7. Fry evenly until golden brown on all sides, then remove from hot oil and place in a plate/bowl lined with a paper towel.
  8. Repeat steps 6 and 7 for remaining batter.
  9. May serve with a dark chocolate dip or another dip of choice.
