Steak au poivre with cream sauce recipe

The pepper is tamed by the cream sauce. Seriously delicious and very easy to prepare.

  • Yield: 4 Servings
  • Cooking Time: 16 Minutes

Ingredients

  • 4 tbsp crushed black peppercorns
  • Salt to taste
  • ½ tsp garlic salt
  • 4 New York strip steaks
  • 3 tbsp butter
  • 3 tbsp cognac
  • ¼ cup beef broth
  • 1 cup heavy cream
  • 2 tbsp flour
How to Make It
  1. Combine the crushed peppercorns, salt and garlic salt in a bowl.
  2. Thoroughly coat both sides of the steak with the spice mixture.
  3. Heat the butter in a skillet and add the steaks.
  4. Depending on desired doneness, cook about 3 minutes each side.
  5. Transfer the steak to a platter and keep warm.
  6. Deglaze the skillet with the cognac.
  7. Pour in the beef broth and heavy cream and stir.
  8. Add the flour to thicken the sauce.
  9. Let the sauce simmer for 10 minutes.
  10. Spoon the sauce over the steaks.
