Sweet potato chips with garlic mayo recipe

Ingredients

  • 3 large sweet potatoes, peeled and cut into 1 cm-thick chips
  • 60 ml solid cooking fat, melted
  • Sea salt
  • 125 ml Garlic ‘Mayo’
How to Make It
  1. Preheat the oven to 200°C.
  2. Place the sweet potato chips in a large bowl and coat with the cooking fat and salt. Arrange on a few baking trays, making sure that the chips have adequate space between them (this is what makes them crispy!). Use 3 or 4 baking trays if you need to.
  3. Bake for 10 minutes, remove from the oven, flip, and bake for another 10 to 15 minutes, watching at the end so that they don’t burn.
  4. Sprinkle with sea salt to taste and serve with the garlic ‘mayo’.
