Thyme for Salad recipe

Ingredients

Dressing
  • 2 tablespoons walnut oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 2 scallions, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • ¼ teaspoon oregano
  • 1 tablespoon fresh thyme, chopped
  • Sea salt to taste
  • ¼ teaspoon freshly ground black pepper, or to taste
Salad
  • 1 cup aduki beans, cooked
  • ¼ cup slivered almonds
  • ½ red bell pepper, sliced
  • 1 tomato, chopped
  • Several leaves of romaine lettuce
How to Make It
  1. Whisk oil, vinegar, garlic, scallions, parsley, oregano, thyme, salt, and pepper together in a small bowl.
  2. Place the beans, almonds, peppers, and tomato in a salad bowl and toss with the dressing. Serve on a bed of romaine lettuce.
