Turkey and pesto crepes recipe

This is a delicious dinner style crepe I know you are going to want to make over and over again. It is so delicious, even the pickiest of eater will be impressed by these crepes.

Ingredients

  • 1 cup of all-purpose flour
  • ½ teaspoons of salt
  • 1 teaspoon of white sugar
  • 3 eggs
  • 2 cups of whole milk
  • 1 teaspoon of pure vanilla
  • 2 Tablespoons of butter, melted
  • 1 pound of turkey, thinly sliced
  • 1 pound of mozzarella cheese, shredded
  • 2 Roma tomatoes, chopped
  • 2/3 cup of premade pesto
How to Make It
  1. In a bowl, add in the all-purpose flour and dash of salt. Stir well to mix.
  2. In a separate bowl, add in the white sugar, eggs, whole milk, pure vanilla and melted butter. Whisk well to mix. Add in the flour mix and stir well to incorporate.
  3. In a skillet set over medium to high heat, grease with cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat.
  4. On each crepe, add a thin layer of the pesto. Add a layer of the sliced turkey, shredded mozzarella cheese and chopped tomatoes. Roll tightly and place onto a serving plate with the seam side facing down. Repeat. Serve immediately.
