Apple bundt cake recipe

Ingredients

  • 2 cups apples peeled, cored and diced (or sliced)
  • 1 tablespoon brown sugar
  • 1 tablespoon ground cinnamon
  • 3 cups all-purpose gluten-free flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups white sugar
  • 1 cup vegetable oil
  • ¼ cup orange juice
  • 3 teaspoons vanilla extract
  • 4 eggs, room temperature
  • ¼ cup confectioners’ sugar  for dusting
How to Make It
  1. Preheat the oven to 350 degrees F.
  2. Grease a 10” Bundt pan with butter or margarine.
  3. In a medium mixing bowl, combine together the diced apples, brown sugar and, cinnamon; toss and set aside.
  4. In a separate mixing bowl, sift together the flour, baking powder, and salt; set aside.
  5. In a large bowl, combine the white sugar, oil, orange juice, vanilla, and eggs. Beat on high until smooth. Add the flour mixture and blend ingredients together.
  6. Pour half of the batter into the Bundt pan. Add the apple mixture and top with the remaining batter.
  7. Bake for 50 minutes, or until a toothpick comes out dry. If not ready, cook an additional 5-10 minutes.
  8. Remove from oven and let cool in pan for 15 minutes.
  9. Turn it out onto a wire rack and let cool completely. Decorate with confectioner’s sugar.
  10. Delicious served warm with ice cream!
