Baby spinach & bacon salad recipe

Ingredients

  • 1 slice bacon, cut crosswise into ¼-inch strips
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tsp cider vinegar
  • 5 cups baby spinach
  • ½ cup pine nuts, toasted
How to Make It
  1. Cook bacon over medium heat in a nonstick skillet, occasionally stirring, until crisp, about 7 minutes. Remove bacon and drain on paper towels.
  2. Pour off and discard all but 2 tsp bacon drippings. Add onion and cook, stirring frequently, until translucent, about 2 minutes. Add tomatoes, pine nuts, salt, and pepper and cook, stirring frequently, just until tomatoes are softened, about 1 minute. Remove skillet from heat and add vinegar.
  3. Place spinach in a large bowl. Add hot tomato mixture and bacon; toss to combine. Serve at once.
