Ingredients

  • 2 Tbsp olive oil
  • 4 slices bacon cooked crisp, crumbled
  • 3 large sweet potatoes
  • 4 green onions, sliced, green parts only
  • Salt, ground black pepper, to taste
How to Make It
  1. Preheat oven to 350°F.
  2. Coat a casserole dish with olive oil.
  3. Clean and remove the skin from your potatoes. Then cut into small chunks.
  4. Place the potatoes in the casserole dish and stir to coat with olive oil.
  5. Top with bacon crisps and season with pepper, salt, and onion.
  6. Cook in the oven for 1 hr.
