Pici with garlic recipe

Ingredients

  • 1 pound flour
  • 4 cloves garlic
  • Olive oil
  • Salt and freshly ground pepper
  • Grated pecorino
How to Make It
  1. Mix the flour with water and a pinch of salt. Knead into a smooth, even bread-like dough.
  2. On a lightly floured surface, roll out the dough into a thin sheet and cut into strips.
  3. Roll the strips into thick spaghetti and set aside.
  4. In a skillet, warm 6 tablespoons of olive oil. Add the garlic, and cook briefly.
  5. Cook the pasta in boiling salted water until al dente. Drain, and add to the skillet with the garlic. Sprinkle with pecorino, season with pepper, and toss.
  6. The pasta can also be served with a simple meat sauce, duck ragù or a sauce made with onions, pancetta and tomatoes
