Bread dough fritters recipe

  • Yield: 6 Servings

  • 9 ounces flour
  • 1 ounce fresh yeast
  • 2 ounces butter or lard
  • ½ cup stock or milk
  • Salt
  • Vegetable oil
How to Make It
  1. Dissolve the yeast in warm stock or milk. Mound the flour, and make a well in the centre. Pour the yeast into the well. Add the butter and a pinch of salt, and work the mixture to form a smooth, even dough.
  2. Place the dough in a bowl and set aside to rise for about 1 hour.
  3. Divide the dough into small pieces, and fry in abundant hot oil until golden. Remove from the oil and drain on paper towels. Serve warm, sprinkled with salt.
  4. To save time, substitute the fresh yeast cake with an envelope of active dry yeast. The dough will be ready for frying immediately.
