Ingredients

  • 3 tbsp (20 g) oat flour
  • 1 tbsp (6 g) blanched almond flour
  • ½ tsp baking powder
  • A pinch of salt
  • 2 tbsp (15–30 ml) unsweetened applesauce
  • 1 tbsp (15 ml) maple syrup
  • 1 tsp vegetable oil
  • 0.12 tsp almond extract
  • ¼ cup (35 g) fresh blueberries
  • 2 tsp (5–10 ml) blueberry jam (for refined sugar–free, use a jam that’s naturally sweetened with fruit juice)
How to Make It
  1. Combine the oat flour, almond flour, baking powder and salt in a small microwave-safe mug or bowl.
  2. Add the applesauce, maple syrup, oil and almond extract, mixing until the ingredients are well combined. Gently fold in the blueberries and drop the jam on top, using a toothpick or knife to swirl it around a little.
  3. Microwave your muffin on high for 2 minutes and allow it to cool slightly before enjoying.
