Muesli Muffins Recipe

Ingredients

  • 125 ml sunflower oil
  • 120 g soft brown sugar
  • 1 egg
  • 180 g cake flour
  • 2 ml salt
  • 5 ml ground cinnamon
  • 5 ml baking powder
  • 5 ml bicarbonate of soda
  • 150 g Basic Muesli
How to Make It
  1. Preheat the oven to 180 °C. Line or grease a muffin tin.
  2. Beat the oil, sugar and egg together until light and creamy.
  3. Sift together the flour, salt, cinnamon, baking powder and bicarbonate of soda and gently fold it into the egg mixture.
  4. Add the muesli and mix well.
  5. Pour the batter into the prepared muffin tin and bake for 25–30 minutes or until an inserted skewer comes out clean.
