Sugar-free goji cookies recipe

Ingredients

  • ¾ cup Brazil nuts
  • 2 tablespoons coconut butter
  • ⅓ cup goji berries
  • 1½ cups coconut flakes, macaroon-cut or fine-cut
  • ⅓ cup lucuma powder
  • ¼ cup tocotrienols or grassfed whey powder
  • 1 tablespoon mesquite powder (optional)
  • 1 teaspoon stevia leaf powder
  • 1 teaspoon vanilla bean powder
  • 1 teaspoon moringa powder (optional)
  • ¼ teaspoon sea salt
How to Make It
  1. In a food processor, mix the Brazil nuts and the coconut butter into a paste.
  2. Blend the goji berries in a coffee grinder or a spice grinder into a powder.
  3. Add all ingredients to the food processor, and mix until combined thoroughly.
  4. Press the dough evenly into a parchment-paper-lined 8 × 8-inch brownie pan, and chill for about 1 hour, until firm.
  5. Cut into shapes. Store chilled.
