Chinese cabbage soup recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 stalk celery, diced
  • 3 cups water
  • 2 cups Chinese cabbage, shredded
  • 1 teaspoon freshly grated ginger
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • 2 drops hot chili oil
  • 1 teaspoon tamari
  • ½ package extra-firm tofu, diced
  • 1 tablespoon grated lemon zest, for garnish
  • 1 tablespoon chia seeds, for garnish
How to Make It
  1. Heat the oil in a large saucepan over medium heat and sauté onion, garlic, and celery until onion is translucent.
  2. Add water and bring to a boil.
  3. Add cabbage, ginger, salt, and pepper and simmer for 15 minutes.
  4. Add chili oil, tamari, and tofu and stir well.
  5. Garnish with lemon zest and chia seeds.
