Rainbow cookies recipe

Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • ½ cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • ⅓ cup powdered sugar
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cream of tartar
  • 1 (3-ounce) package Jell-O mix
  • Food coloring (optional)
How to Make It
  1. Preheat the oven to 350°F. Line two baking sheets with silicone baking mats or parchment paper.
  2. In a large bowl, using a hand mixer, beat together the butter, ¾ cup of the granulated sugar, and the powdered sugar until fluffy. Add the oil, vanilla, and egg and mix for about 1 minute.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and cream of tartar. Slowly add the flour mixture to the sugar mixture and stir until combined.
  4. Divide the dough in half. Sprinkle 2 tablespoons of the Jell-O mix on top of one half and then knead the dough until combined. You can add a few drops of food coloring at this point if you’d like the color to be more vibrant.
  5. Place the remaining Jell-O mix in a small bowl. Roll the Jell-O dough into 1-inch balls and then roll them in the Jell-O mix. Place the remaining ¼ cup granulated sugar in a second bowl. Roll the plain dough into 1-inch balls and then roll in the granulated sugar. As you work, place the coated dough balls on the prepared baking sheet and gently press down on each with the bottom of a glass to flatten into a circle.
  6. Bake for 8 to 10 minutes. Let cool on the baking sheets for a few minutes and then transfer to a wire rack.
  7. Store in an airtight container at room temperature for up to 3 days.
