In the South, stewed tomatoes can be found in every household, just like sweet tea. Everyone jazzes their stewed tomatoes up a little differently with spices, and some put in okra and corn. No matter how you make it, it’s always best served over rice or with a nice buttered biscuit.

  • Yield: 4 cups

Ingredients

  • 4½ cups tomatoes, peeled and diced
  • 1 bell pepper, diced
  • 1 small Vidalia sweet onion, diced
  • ¼ teaspoon hot pepper flakes
  • 1 teaspoon garlic, minced
  • ½ cup water
How to Make It
  1. Place all ingredients into your pot. Lock lid and close vent.
  2. Cook on High Manual Pressure for 12 minutes. Once done, QPR the pressure. It’s ready to serve!
