Bammie cakes recipe

Ingredients

  • 2 pounds cassava
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • ½ red bell pepper, diced
  • ½ yellow pepper, diced
  • 3 teaspoons Cajun seasoning
  • ¼ cup flaxseed meal
  • 1 teaspoon arrowroot
  • ½ cup walnuts, chopped
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • Olive oil for frying
  • One lemon juice, for garnish
  • 1 small zucchini, sliced, for garnish
  • Red cabbage, shredded, for garnish
How to Make It
  1. Boil the cassava for 30 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat and sauté onion and garlic until the onion is translucent.
  3. Add the peppers and sauté for another minute or two.
  4. Peel the cassava and purée in a food processor. Add onion-garlic-pepper mixture, Cajun seasoning, flaxseed meal, arrowroot, walnuts, salt, and pepper and pulse until well-mixed.
  5. Form the mixture into patties approximately 2 inches in diameter.
  6. Add another tablespoon or two of oil to the skillet and fry the bammie cakes until golden brown, approximately 2 – 3 minutes.
  7. Flip the cakes and brown the other side, another 2 – 3 minutes.
  8. Serve warm, garnished with lemon juice, zucchini slices, and shredded red cabbage.
