Ajada sauce recipe

Ingredients

  • 1⁄2 cup extra-virgin olive oil
  • 3 cloves garlic, crushed
  • 2 tablespoons mild red pepper flakes without seeds (such as Turkish marash or Korean hot pepper)
  • 1⁄2 cup strong Cider Vinegar (at least 6% acidity)
  • 1 teaspoon salt
How to Make It
  1. Heat the olive oil in a small pan over medium heat until it is on the verge of smoking.
  2. Add the garlic and pepper flakes and stir. Cook until the garlic begins to turn golden, about 1 minute, then add the vinegar and turn off the heat. Take care not to overbrown the garlic or the sauce will taste like a garlic bagel (though worse things could happen).
  3. Stir in the salt and use the sauce while it is still warm.
