Apple, walnut, and tofu salad recipe

Ingredients

Dressing
  • 2 tablespoons walnut oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, pressed
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • Pinch cayenne
Salad
  • ½ cup yellow onion, diced
  • 1 stalk celery, sliced
  • ¼ teaspoon ground cumin
  • 1 Granny Smith apple, diced
  • 1 package firm tofu, diced
  • ½ cup walnuts
  • ½ cup chives, for garnish
How to Make It
  1. Whisk oil, lemon juice, garlic, salt, pepper, and cayenne together in a small bowl.
  2. Place onion, celery, cumin, apple, tofu, and walnuts in a salad bowl and toss with the dressing.
  3. Garnish with chives.
