Dragon fruit and strawberry cream recipe

Ingredients

  • 2 oz frozen pitaya
  • 1 cup strawberries
  • ½ cup apple juice
  • 4 tbsp honey
  • 1 cup canned coconut milk or cream
  • ½ cup 0% fat coconut Greek yogurt
  • 2 scoops collagen peptides/vital proteins
How to Make It
  1. Puree pitaya , strawberries, apple juice, and 2 tbsp honey in a blender. Pour into a jar.
  2. To prepare Coconut Cream
  3. Combine coconut milk, Greek yogurt, 2 tbsp honey, and collagen peptides in a blender until creamy and smooth.
  4. Alternately pour fruit mixture and coconut cream into popsicle molds.
  5. Add sticks and freeze approximately 6 hours.
