Protein strawberry shortcake crepes recipe

This is a delicious crepe dish that is perfect to make right after your morning workout. It is loaded with extra protein to help you build lean muscles.

Ingredients

For the Crepes
  • ½ cup + 2 Tablespoons of egg whites
  • 1 tablespoon of pure maple syrup
  • 1 scoop of powdered protein
  • 2 Tablespoons of almond milk
  • ½ Tablespoons of coconut oil
For the Filling
  • 1½ cups of strawberries, thinly sliced
  • 1 tablespoon of maple syrup
For the Garnish
  • 1/3 cup of coconut whipped cream
  • 1 tablespoon of coconut, flaked
  • 1 strawberry, fresh and thinly sliced
How to Make It
  1. Prepare the crepes. In a food processor, add in all of the ingredients for the crepes. Pulse on the highest setting until smooth in consistency.
  2. In a skillet set over medium to high heat, grease with the cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat and set the crepes aside.
  3. Prepare the filling. In the same skillet, add in the strawberry slices and maple syrup. Stir well until coated. Cook for 3 to 4 minutes or until slightly thick in consistency. Remove from heat.
  4. Add a layer of the strawberry mix in the center of each crepe. Roll tightly and place onto a plate with the seam side facing down. Repeat.
  5. Serve with a topping of whipped cream, flaked coconut and the sliced strawberry.
